Sundried Tomato Hummus

I love a good hummus! And I have recently been reminded how easy it is to make. And you get to make it exactly how you want it. Bonus! It’s great on crackers, in sandwiches or wraps, and even on a salad.

Chickpeas are awesome as a plant based source of protein, as well as fibre, iron, vitamin B6 and magnesium. Plain hummus is great but how good are sun-dried tomatoes!! Definitely takes the flavour to the next level.

Ingredients

1 C cooked chickpeas

1/3 C sundried tomatoes

2 tsp tomato paste

1/2 tsp ground coriander seeds

1/2 tsp ground cumin seeds

1 clove garlic

2 Tbsp olive oil

1/2 C water

juice from one large lemon (more or less to taste)

salt to taste

Method

Put everything in the blender and whizz up. Taste the hummus.

Feel free to add any ingredients to get the flavour your like. I quite like a bit of lemon and garlic.

Add more water and whizz again if the texture isn't smooth enough.
